I designed the Star-Lite to offer the performance of high-end, store-bought kitchen knives—without the steep custom made price tag.

Inspired by my Hebrew kitchen knife, the Star-Lite is a streamlined, cost-effective option for those who prefer lightweight, thin blades or need a reliable slicer for melons and other large produce. The Star-Lite is approx 7 ounces with a .065 thick blade while my Hebrew knife is approx 14 ounces with a .15 blade.

Thin blades are great for some jobs like slicing thick melons, thick rope, paper thin tomato slices and tight spaces where a thin filet knife is best used. But understand, they are more likely to bend, chip, roll the edge and have less edge retention. Thicker kitchen knives will generally require less sharpening, provide more mass and stability while chopping.

Its profile borrows from my original Hebrew design but features a slightly lowered front tip. This subtle tweak makes it a versatile hybrid—part curved blade for rocking cuts, part straight edge for long slices and precision work like julienning.

The handle is crafted from stabilized American dark walnut and secured with brass pins, combining durability with timeless warmth.

For the blade, I chose AEB-L stainless steel—a favorite among professional makers and the same alloy used in many razor blades. It’s easy to sharpen, highly corrosion-resistant, and impressively tough. One of my friends builds exclusively with AEB-L, and his knives start at $400 and climb to $800 when paired with ornate handles like those on my Hebrew model.

Full transparency: while AEB-L is a fantastic steel, I personally prefer 440C for most of my kitchen knives because it holds an edge longer. But for a budget-friendly blade that still punches above its weight, AEB-L was the right call for the Star-Lite.
